Así que cuando mi amiga Arianna Rinaldo, directora de la revista de fotografía <a href="http://www.ojodepez.org/" rel="noreferrer" target="_self">Ojo de Pez</a>, se prestó a prepararme unas alcachofas tal y como las hizo durante décadas su <em>nonna </em>Sara me hizo feliz como una perdiz.</p> <p>La receta posee la sencillez y la humildad que hacen grande la comida casera. Una combinación inteligente de unos pocos ingredientes baratos, ejecutados con buena mano, logra crear un plato exquisito del que difícilmente te puedes cansar. Al menos yo no podría hartarme de algo que lleva alcachofas, ajo y parmesano, tres alimentos por los que ma-to.</p> </div> <p><a id="more"></a><span></span></p> <div class="entry-more"> <p>Hay una cosa que me gusta de esta receta, y es cómo pasa olímpicamente de la actual dictadura de las cocciones cortas en las verduras. Yo soy el primero que me he acostumbrado a comerlas siempre al dente, porque asumo que así conservan mejor las propiedades nutritivas y el color. Pero de vez en cuando es un gustazo tomarte un guisote en el que la verdura está como mantequilla, como es el caso.</p> <p><strong>Dificultad</strong></p> <p>Para señoras de 100 años.</p> <p><strong>Ingredientes</strong></p> <p>Para cuatro personas</p> <ul><li>6 alcachofas grandes (si puede ser, de tipo <a href="http://www.lospicchiodaglio.it/index.php?sez=materie&azione=scheda&elemento=257" rel="noreferrer" target="_self">mammole; </a>si no, normales)</li> <li>2 dientes de ajo</li> <li>100 gr. de parmesano aprox.</li> <li>50 gr. de pan rallado aprox.</li> <li>500 ml. de caldo de verduras</li> <li>200 ml. de vino blanco</li> <li>2 cucharadas de perejil picado</li> <li>Mantequilla muy fría</li> <li>Aceite de oliva extra virgen</li> <li>Sal</li> </ul><p><strong>Preparación</strong></p> <p>1. Rallar el parmesano.</p> <p>2. Calentar un poco de aceite en una sartén un poco alta o en una cazuela baja a fuego medio. Dorar en él los dientes de ajo con cuidado de que no se quemen.</p> <p>3. Mientras, pelar y cortar los tallos de las alcachofas en trozos de unos 3 cm. aproximadamente, e ir echándolos a la sartén. Eliminar las hojas exteriores, cortar las alcachofas longitudinalmente en cuatro trozos e ir añadiéndolos, dejando el corazón hacia arriba.</p> <p>4. Poner una lámina fina de mantequilla sobre cada trozo. Cubrir generosamente las alcachofas con con pan y parmesano, y terminar con un chorrito de aceite y el vino blanco. Ahogar con medio litro de caldo, tapar y bajar el fuego al mínimo.</p> <p>5. Cocer durante un par de horas, añadiendo de vez en cuando un poco más de caldo si se queda seco.  Espolvorear el perejil picado un par de minutos antes de acabar. Se pueden hacer con antelación y recalentar.
